"This is a futuristic version of the Belgian waffle. Inside, you'll find a pearl filled with Baileys cream & glazed with vegetal. The jelly is based on orange and ginger, on top I used dried kaffir powder and caramelised sesame seeds. Seaweed, corander and caramel spiced with Dashi for extra flavour. Jasmin blossom for decoration."
