THE ART OF THE BONBON
Small in scale. Limitless in possibility.
Every element matters — the snap of the shell, the balance of flavour, the contrast of textures, the precision of the finish. It is where creativity meets technical mastery, and where chocolate can become the starting point for an entire idea.
At the Callebaut World Chocolate Masters 2026 World Final, 15 of the world’s leading chocolate talents will put their own expression of this craft to the test. Every finalist will create with Callebaut products, using them as the foundation for their own unique interpretation of the Bonbon challenge.
THE CALLEBAUT SELECTION RANGE
Before the filling, the texture or the finishing touch, there is the chocolate.
Its taste can lead the flavour direction, complement an ingredient or create contrast. Its fluidity can influence the delicacy of a shell. Its colour can become part of the visual identity. Choosing the right chocolate can shape the whole creation.
The Callebaut Selection gives chocolate professionals a versatile palette to create with — from the balanced cocoa character of 811 and smooth cocoa and caramel notes of 823, to creamy W2, caramel chocolate Gold and the naturally fruity taste and colour of RB2.
Mould, enrobe, fill, layer or pair. Start with the chocolate that works for what you want to create.
Callebaut Signature Collection
Discover Callebaut Single Origin chocolates, each made with cocoa from a specific origin and offering its own distinctive taste profile.
From fruity and citrus notes to roasted, woody, floral or caramel characters, each chocolate brings a different starting point for flavour pairing. Follow the flavours naturally present in the chocolate, amplify them with complementary ingredients or create something unexpected through contrast.
Choose your origin. Explore its taste. Make it your own.
BUILD THE EXPERIENCE
The most memorable creations engage more than taste alone. Every element can change how a bonbon is experienced.
THE SHELL
The first encounter. Thin and crisp, with the colour, shine and snap that set an expectation for what comes next.
THE CENTRE
Ganache. Caramel. Praline. Gianduja. Fruit gel. Or something less expected. This is where flavour and technique meet.
THE TEXTURE
Crisp. Crunchy. Flowing. Chewy. Aerated. Silky. Melting. Contrast can transform a single bite into an experience.
THE FLAVOUR
Fruit, nuts, spices, botanicals, coffee, tea, caramel and more can complement the chocolate, amplify its character or create deliberate contrast.
THE FINISH
Shape, colour, texture and shine create the first impression; before the chocolate is even tasted.
MASTER THE TECHNIQUE
Precision makes the difference.
Tempering for shine and snap. Controlling fluidity for delicate shells. Building stable ganaches and caramels. Creating layers that deliver in the right sequence. Combining textures without losing their individual character.
At the Callebaut Chocolate Academy™, professional chefs can develop the techniques behind contemporary confectionery and learn from chocolate experts around the world.
Because creativity can take you further when technique gives you the freedom to realise it.
