The first assignment of the South Korea National Selection was SHARE THE FUN. The contestants had to craft a sharing dessert for 6 people as an after-dinner treat. The jury members evaluated transport practicality, creative design, but more importantly, component pairings and flavour.

UDO PEANUT SHARE CAKE

Crafted as a premium treat due to its complex flavour profile and sophisticated texture contrast. The cake started off with a cacao crustillant featuring the berry-like acid profile of Cacao Barry Saint-Domingue dark chocolate. The same chocolate starred in a soft crèmeux paired with an almond biscuit. The two other stars of the show? A Udo peanut caramel and a chocolate mousse with the rich taste of Cacao Barry Ghana milk chocolate.

This edible interpretation of the most well-known AI chatbot emphasised the engagement aspect of all of the chef's creations. It relied on heavy chocolate indulgence held together by a cacao biscuit. A custard cream and lemon compote were part of the mix to balance out the richness. Boasting up to 12 different components, Cacao Barry's Fleur de Cao and Alunga chocolates took the spotlight in the form of a mousse. Almonds and Zéphyr white chocolate were united in a smooth cream, paired with yet another soft cream made with Cacao Barry Équateur dark chocolate.
